Soul food can be healthy!

Soul food can be healthy! When one takes a close look at what enslaved African Americans ate during slavery, it was close to what we would now call a vegan cuisine. Meat was used very sparingly, and slaves usually got unprocessed foods because refined foods were deemed only appropriate for wealthy whites in the antebellum South. Take a look at the “superfoods” that help the body fight disease and they are often soul food’s building blocks: dark leafy greens, sweet potatoes and nuts.
